delicious chicken tacos (recipe included!)

I love using my crock pot for our meals. Whether it is a beef curry, soup, or chili or as we had for dinner on Tuesday, chicken tacos. I love putting everything in the crock pot and realizing when it is almost dinner time, most of the work is already done for me!
The last few times I have made chicken tacos, the chicken turned out rather dry so I turned to trusty Pinterest to find a new and delicious recipe. The recipe I found did not disappoint. The chicken was moist, it was flavorful and it made plenty of leftovers so I can make enchiladas or quesadillas later this week. The recipe called for a packaged taco seasoning but if you remember my recent homemade taco seasoning post, I used that taco seasoning to make the chicken flavorful! 

To make the delicious chicken for tacos, get your crock pot,  1 1/2 lb chicken breasts (I used thighs), 1 1/4 cup chicken broth, the homemade taco seasoning spices, 1 can of Rotel, and I squeezed two limes into the crock pot. 

Add the chicken to the crock pot. 

Make your homemade taco seasoning, measure out the chicken broth and add the taco seasoning to the broth and stir. Add the can of Rotel to the chicken broth mixture then pour it all over the chicken. 


As I mentioned I squeezed two limes over the chicken and broth for extra flavor. Cook the chicken on high for 4 hours or on low for 6-8 hours. When the chicken is cooked, shred the chicken in the broth then serve on flour or corn tortillas. 

Or use the chicken in quesadillas or make enchiladas with it. The possibilities are endless for how you can use the chicken, you don't have to just have tacos for dinner. 
To make the tacos in the photos, I used corn tortillas. I heated them up slightly on the stove, sprinkled some cheese on the tortillas and let the cheese melt. After the cheese melted, I added the shredded chicken and topped off the taco with sour cream and guacamole!

Make this recipe! It is delicious! We had two containers full of leftover for future meals!
