Oh Pinteresting Wednesday - Watermelon

If you hung around me long enough, you see quickly learn how much I love watermelon. Sean says I am slightly addicted, any other watermelon-anonymous meeting goers out there? But seriously it is so so good! Each week when we get the grocery store circulars, I quickly open them up to find out which stores have watermelon on sale the next week and where is the cheapest price and of course I stock up.
I found some cute pins of watermelon over at Pinterest and wanted to share them with you all today and other watermelon-addicts, don't be shy, we can start a support group.

Oh Pinteresting Wednesday - Encouragement

For today's Oh Pitneresting Wednesday, I wanted to share some encouragement. Truth be told, I need a little bit of it in my life with the stress of having to find a new job, knowing the end of my current job is in a few short months and the question of what if? Honestly, I have a few 'what if' moments but I know God has a plan for me, He knew my work situation long before I even got to this day
 and I trust His plan for me.
All that being said, life has its tough moments and I found these pins to be encouraging to me and hope if any of you are going through a tough time, they will provide you encouragement as well.

Key Lime Coconut Bars

There is nothing like the taste of the island or taste of the tropics. When I hear tropics, I think of coconut, mango and key limes. I love a good citrus dessert, which would explain why one of my favorite desserts is a lemon meringue pie. I had this recipe pinned on Pinterest for awhile. It was staring at me every time I logged into Pinterest, it was calling me to make it and of course eat it. I finally caved to the yummy goodness and made this delicious dessert, eating it while watching the Bachelorette finale with my friend Stephanie, while my husband and her husband went to grab a beer.

Two great things about this recipe, it is super yummy, and requires no eggs. Not to make the entire baking time is 20 minutes and then bam! you have a delicious dessert. The hardest part of this recipe is waiting for it to cool, then chill in the refrigerator before you eat it. The best part the smoothness and creaminess you get when you bite into the dessert not to mention homemade whipped cream. Yah baby!
First, gather together your ingredients. 1 1/2 cup graham cracker crumbs, 2 tablespoons sugar, 1/2 cup of sweetened coconut flakes, 1/2 cup melted butter, 3 cans of sweetened condensed milk, 3/4 cup lime juice(freshly squeezed is best), 1/2 cup sour cream, 1 tablespoon lime zest.

Preheat your oven to 350F degrees. In your square 8X8 pan, line it with parchment paper and leave the ends out. Or if you are using a non-stick pan, you are good to go. In a bowl, combine the graham cracker crumbs, sugar and coconut flakes.


Add in the melted butter and combine the ingredients until it is the consistency of wet sand.


 Press this mixture evenly into the bottom of the pan and bake for 8-10 minutes.

Once the crust is baked, take it out of the oven and let it cool and leave the oven on.
In your mixing bowl, add the 3 cans of sweetened condensed milk, sour cream, lime juice and zest.





Turn your mixer to get the ingredients a good mix.
Pour the contents over the cooled graham cracker crust.


Then bake the lime bars into the oven for another 8-10 minutes or until the mixture is set. Remove the bars out of the oven, let it cool and once cooled, put them in the refrigerator to chill.
When the bars are chilled, slice up them into squares, make some homemade whipped cream, put a dollop on the square and sprinkle some toasted coconut flakes on top of the whipped cream.

To toast coconut flakes, you can do this while the crust or filling is baking, spread some coconut flakes on a baking sheet, pop it in the oven for 3-4 minutes until lightly golden brown. Put the flakes out, let them cool and garnish your key lime coconut squares with them.

Oh Pinteresting - Wedding Detail


Thank you for the sweet comments on our anniversary yesterday. I was so happy all day long!
I wanted to share a few details of our wedding today and I put all the photos up on Pinterest. The colors for our wedding were cranberry, golden yellow and cream, so from Sean's point of view, essentially they are USC colors, which he hates, he is a UCLA fan. Since we are both runners (him more seriously, me just recreationally), I decided to incorporate elements of running throughout. I won't mention how but let the photos tell the details.

*On a side note, Pinterest wasn't around when I was planning my wedding and I spent so much time trying to remember certain images I had seen and where I had seen them. Since Pinterest, I have seen so many cute images saying to myself, I wish I would have done this or that. However, looking over my wedding photos of all these details, I don't regret what elements I incorporated into Sean and I's wedding. I am really happy with our wedding and how we did things and I wouldn't change the elements we used either way, Pinterest or no Pinterest. 
For my Oh Pinteresting Wednesday, details from my wedding 2 years ago.

These were the flowers, the first bouquet was mine and the second were the bridesmaids.
My bouquet had orchids, lilies, mini roses and ranunculus.

For the aisle decoration, we did running shoes and sprinkled rose petals. We used brand new running shoes just in case you were wondering, I didn't want our guests to be sitting next to those shoes with their nose wrinkling at the stench.


For our reception, we named each of our tables after a major marathon. Sean wrote an informational card about the marathon that was on each table. We had tables like the London Marathon, Boston Marathon, etc.

These are some photos of the table assignments. I taped the cards to the thick yellow ribbon which were laid on top of a rose petals.




The gift we gave our guests was a package of coffee because Sean and I love coffee and our first date was at a coffee shop. The coffee was SLO(San Luis Obispo) Roast Coffee, which is from the area that Sean grew up. We got to pick the flavor of coffee, french vanilla, and give our brew a specific name.


Our reception centerpieces were monochromatic red vases and red dahlias and roses.


This was our cake and my sister made the cake topper with running bibs on the back Sean wearing 7 and me wearing 17 for our wedding date. She was very involved with the details on the topper.


And for our guests, red velvet cupcakes.


And yes those are chocolate running shoes on top of the cupcakes.
