All-Time Favorite Comfort Food...

If you are like me, there are some certain food items that just take you back to your childhood, that bring you comfort when you are needing it or just make you smile and remember. For me, that certain food item is mac and cheese. Before you tell me my recipe isn't mac and cheese let me just explain this is the mac and cheese I grew up with and have I know mac and cheese to me. People, I don't bake my mac and cheese. That isn't how my mom did it so it was like a revelation when I discovered most recipes for mac and cheese are baked. The mac and cheese my mom made growing up and the one I still make to this day is a simple cheese sauce, homemade, poured over noodles and that is it. It is a bowlful of gooey, yummy cheesiness and I will keep my mac and cheese unbaked, thank you very much!
This cheese sauce is your standard cheese sauce and you can use it to pour over veggies, it was commonly broccoli in our house or other reasons why you need a cheese sauce.
For this mac and cheese recipe, you need 1 cup milk, 2 tablespoons butter, 2 tablespoons flour, shredded cheese, noodles. Yup very easy!
Cook your noodles while you make the cheese sauce.

To make the cheese sauce in a sauce pan, melt the butter.

When the butter is almost melted, add in the flour and stir with a whisk to combine the ingredients. You are making what is called a roux and is the thickener to the cheese sauce.

 Once the two ingredients are combined, add in the cup of milk and turn the heat down. You don't want to burn the milk.
Once the milk mixture has thickened up, add in the shredded cheese. Shredding cheese from a block of cheese is preferred because it will actually melt better. The preshredded cheese has corn starch in it and the cheese won't melt as well.




Add the cheese sauce to the drained and cooked noodles, then serve, eat and enjoy!


I dare you to have any leftovers of this mac and cheese in your frig, in fact, double dog dare you :-)

I am with you. Stovetop mac and cheese is about as good as comfort food gets. Whenever I'm feeling rich and fancy I buy extra special cheeses from zingerman's and keep some on hand for mac and cheese. yum yum yum... now maybe i'll have to make some for dinner!

Mac n cheese is my all-time favorite comfort food, too! I like Kraft and I add cheddar cheese and a cut up hot dog. :-) A can of chili mixed in is also yummy.

Mac n cheese is one of my favorite comfort foods as well! I haven't had this in ages though. Boohoo and it wouldn't be a good idea for me to have some right now coz it is already 12:48 AM. I should be sleeping now but you have me tempted to go and make myself some mac n cheese. hehehehe.
