Peanut Butter-Chocolate Pie

How do I celebrate my husband's birthday this past Sunday, with making his requested cake, pie, whatever he wants. It is no surprise to me that he would request a peanut butter chocolate pie. I think it is his favorite flavor combination. I mean it is rare to meet someone who doesn't love peanut butter and chocolate together. His only request for the pie was that it have a cookie crumb crust and he is my husband after all, it was his birthday so his wish was my command. I found a recipe but it had a graham cracker crust, so easy substitution between those and Oreo crumbs. This pie has the Oreo crumb crust, then a layer of chocolate ganache, then the peanut butter mouse all topped off with a layer of homemade whipped cream. Why homemade, because that is the best and that is how the Henning household does whipped cream so there. Do not come into my house with a can of whipped cream! Ok I do allow it, my husband likes it in his coffee, on his ice cream and sometimes the patience of freezing the beater and the bowl and then waiting for the heavy cream to whip up can be unbearable. 
On to the recipe!
First, gather together your ingredients. For the crust, you need 1 cup of Oreo cookie crumbs, 1/4 cup melted butter, 2 tablespoons white sugar. For the chocolate ganache layer, you need 1 1/3 cup chocolate chips, 2/3 cup heavy cream, 2 tablespoons and 1 teaspoon vanilla extract. For the peanut butter mousse filling, you need 1 cup peanut butter chips, 3/4 cup heavy cream, 2 tablespoons creamy peanut butter (not freshly ground or natural), 1 teaspoon vanilla extract. Additionally, you need 1 cup of heavy cream and 2 tablespoons white sugar.
Ok lets make the pie!
Preheat your oven to 350 degrees. You need a 9" pie plate for this pie. In a bowl, combine 1 cup Oreo crumbs, the melted butter and 2 tablespoons sugar.




Mix these ingredients together well and then press the crumbs into the pie plate and on the sides of the plate.

 Bake the crust for 15 minutes in the oven.
Take the crust out of the pie and let it cool slightly. While the crust is cooling, make the chocolate ganache layer. In a microwave-safe bowl, combine the chocolate chips and 2/3 cup heavy cream along with the corn syrup and vanilla extract.


Microwave these ingredients until the chocolate chips completely melt.


Pour the chocolate mixture onto the bottom of the Oreo crust and place the pie plate into the oven for 10 minutes.


Meanwhile, in another microwave-safe bowl, add the peanut butter chips and 3/4 cup heavy cream.
Again, melt the peanut butter chips until smooth and creamy.

 Add in the vanilla extract and peanut butter and stir until the peanut butter is in fully incorporated into the melted peanut butter chips.


Set this peanut butter mixture aside until barely lukewarm. When the mixture is lukewarm, in your mixing bowl, whip up the 1 cup of heavy cream and 2 tablespoons white sugar.


Whip the heavy cream just before soft peaks form, then pour in the peanut butter mixture in third parts.



 Spoon the peanut butter mousse over the chocolate ganache.


 Then make whipped cream and spoon this on top of the peanut butter mousse.


 Let the pie chill for at least 1 hour to 1 day then serve, eat and enjoy as Sean is clearly doing!

Aww I bet your husband loved it. Happy birthday to him. Seriously, I never get sick of peanut butter. At this point it's my main source of protein since I'm trying to lose weight AND the new baby can't stand when I have any kind of dairy...sigh. =)
