Last week, I made an Italian pot roast and honestly it was the best decision I had made in a long time. The day turned out to be incredibly hot, the house was roasting inside when I came home and guess what because of the slow cooker, I didn't have to turn on a single burner for dinner. I didn't have to heat up the already hot house and dinner was pretty much all prepared for us by the time I got home. That is why I love my slow cooker, I consider it a working wife's best friend. Maybe it seems heavy though, Italian pot roast in the summer but for dinners, I am more about convenience and saving time.
This recipe turned out really good, I thought I would share with you all. I am always searching for great slow cooker recipes, I have mastered the art of slow cooker pulled pork or chicken but I needed another great slow cooker recipe. This meal would be great in the winter too, that stick to your ribs type of meal to help you beat the cold of the winter.
This recipe has very little prep, minimal ingredients and it produces great results for dinner. Enjoy!
First, gather together your ingredients. 3lbs beef chuck roast, 1 can (14 oz.) diced tomatoes, 1 can (12 oz.) tomato paste, 2 tablespoons red wine vinegar, 1 teaspoon oregano, 1 teaspoon basil, 1 teaspoon garlic powder, 6 oz. can tomato paste, salt and pepper to taste.
In your slow cooker, add the beef that has been seasoned with salt and pepper.
Add the 1 can of diced tomatoes, 1 can of tomato paste, red wine vinegar, oregano, basil and garlic powder.
Turn on or plug your slow cooker on high for 1 hour. After an hour, turn down the temperature to low and cook the chuck roast for 8 hours. After the cooking time has finished, pull out the beef from the slow cooker and shred it.
Before you add the beef back into the slow cooker, add the 6 oz. can of tomato paste to the liquid into the slow cooker and stir it into the liquid. After about 2 minutes, you will have a heavier-sauce, gravy like for your beef. Now add the shredded beef back into the slow cooker, then serve over polenta, noodles, rice or whatever you prefer.
Then serve, eat and enjoy!

That sounds so good. I love cock pots. Most of the time they make the best meals. I say most because I once tried to make crackpot lasagna and the noodles literally dissolved and the meat wasn't cooked even after 8 hours. My husband still cringes when I say crockpot. Haha. Cooking adventures are great.
