Pumpkin Bars with Cream Cheese Frosting

Here it is November already, only two more months left in this year! All of my baking items this month will be fall related, whether pumpkin or anything else, pecans, cranberries, etc. The list could go on and on. FYI, I do take suggestions or recommendations on what to bake so if you are looking for something, please let me know! Help me expand my baking list with your help :-)
Today's recipe is pumpkin bars with cream cheese frosting and. Seriously pumpkin, cream cheese, can't go wrong with that combination, yum!
First, gather together your ingredients: 4 eggs, 1 2/3 cup white sugar, 1 cup vegetable oil, 1 can (15 oz.) pumpkin, 2 cups all-purpose flour, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1, teaspoon baking soda, 1/2 teaspoon ground ginger , 1/2 teaspoon ground cloves, 1/4 teaspoon nutmeg.

For the cream cheese frosting, you need 1 8 oz. block of cream cheese,softened,  1/2 cup butter, softened, 2 cups powdered sugar, 1 teaspoon vanilla extract. Let the pumpkin bars cool before you add the frosting.

Next preheat your oven to 350 degrees and grease up a 9/13 baking dish. Now comes the fun part, the making of the batter. In your mixing bowl and the mixer is fitted with your paddle attachment, combine the eggs, white sugar, oil and pumpkin and beat ingredients together until the mixture is fluffy.




In another large bowl, add the flour, the baking soda, baking powder, cinnamon, ginger, nutmeg, and ground clove.
 Then add the dry ingredients to the wet ingredients and mix the ingredients thoroughly but don't overmix!

 Pour the batter into your greased baking dish

and pop it into the over for 25-30 minutes, or until a toothpick comes out clean when stuck in the middle! Then let the bars cool before you spread the cream cheese frosting on them.
To make the frosting, using the paddle attachment, cream together the cream cheese and the butter until it is smooth. Then add the powdered sugar, and then the vanilla.


 Let it mix until it is creamy and smooth. Then spread over the bars. I sprinkled some chopped up pecans on the top because I have them in the pantry but you can leave them off if you would like. Cut into bars, then eat and enjoy!

You should know, in Belgium, we use pumpkins solely for pumpkin soup. it's amazing what you can do with it, can't even guess which one I would try first.
