Chocolate? Sea Salt?

I admit when I saw this recipe and how much flour was in these cookies I was skeptical, very skeptical. After making this however with only 1/4 cup of flour, I'm a believer in fudgy, chocolately cookies with a sprinkle of sea salt to enhance the chocolate. Oh yah did I mention they were gooey and rich and have only 1/4 cup of flour? 
So let's make these chocolate truffle cookies with sea salt. 
For these cookies, you need 1/4 cup flour, 1/4 teaspoon baking power, 1 1/2 cup dark chocolate chips for melting, 2 tablespoon butter, 2 eggs, 1/2 cup granulated sugar, 1 teaspoon vanilla extract, 2/3 cup chocolate chips (non-melted), 2-3 tablespoons coarse sea salt.

 In a double boiler, melt the 1 1/2 cup chocolate chips and butter together. 



Once the chips and the butter are melted, put the bowl into a bowl of warm water to keep the chocolate melted. In your mixing bowl, mix the eggs and sugar together. 

Pour in the melted chocolate and vanilla extract and give the ingredients a good stir. 


Add the flour and baking soda.

 Now you add in the remaining amount of chocolate chips then mix all the ingredients completely. Chill the dough for 10-15 minutes in the refrigerator. While the dough is chilling, preheat the oven to 350 degrees. Once the dough is chilled, scoop rounded tablespoons of dough then sprinkle some sea salt flakes or coarse sea salt on top of the dough.

 Bake the cookies for about 7-8 minutes, until the edges look slightly cracked. Don't let the cookies overbake, the middle will be soft and gooey. Remove the cookies from the oven and let them cool on the pan, cooling them on the pan will allow them to harden before you remove them from the pan. 

Then serve, eat and enjoy with a tall glass of milk!
