My typical, go-to cookies are chocolate chip cookies plain, simple, unassuming, dependable type of cookies. I was feeling in a cookie baking mood yesterday but I didn't want just chocolate chip cookies. I wanted to jazz them up a bit more with nuts, dried cranberries and oatmeal. Too much for you? Nope, not at all! You get the crunch of the nut, the chew from the cranberries and the gooeyness from the chocolate chips, a 3-in-1 type of cookie. So let's make them!
Gather together your ingredients: 1 cup brown sugar, 1 cup white sugar, 1 cup butter room temperature, 2 eggs, 1 teaspoon vanilla, 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 2 cups old fashioned oatmeal, 1 1/2 cup chocolate chips, 1/2 cup walnuts, 1/2 cup dried cranberries.
In your mixing bowl, cream the butter for about 3 minutes.
Now add in the white and brown sugar and mix until all ingredients are light and fluffy.
Add in the eggs and vanilla until completely incorporated.
You will now add in the the dry ingredients, the flour, baking soda and baking powder. Give all the ingredients a quick mix then add in the oatmeal.
Add in the chocolate chips, the nuts and the dried cranberries.
You can change up what you add in as well, substituting white chocolate chips, dried cherries or blueberries and pecans. This cookie dough is your canvas, paint it up with added yumminess!
Chill the dough for at least 2 hours. Preheat oven to 350 degrees F. Then scoop it out onto a greased cookie sheet leaving about an inch space in between. Bake for 7-10 minutes but do not overbake. Take the cookies out of the oven and let them rest on the sheet for a few minutes before removing.
Then eat and enjoy!
