Chocolate upon Chocolate upon Cream Cheese

What is the awesomeness I have for you today? Chocolate chocolate chip cookies! So a quick back story I started making these cookies on Sunday. Then as the dough was already in the mixer then I read that you have to refrigerator the cookie dough for at least 2 hours and it was already 8pm. I wasn't going to stay up until 10pm to finish the cookies, which meant I got to sneak some of the raw dough and anticipate eating the baked cookies the next day.

A forewarning my cocoa powder was the special dark cocoa powder so that is why the cookies look a little black. Does the special dark cocoa powder make these cookies somewhat healthy? I thought so! 

Gather your ingredients for this recipe. 
1/2 cup (1 stick) butter, 1/4 cup (2 ounces) cream cheese, the brick kind not the whipped version, 3/4 cup brown sugar, 1/4 cup granulated sugar, 1 egg, 1 tablespoon brewed coffee, 2 teaspoons vanilla extract, 1/2 cup unsweetened cocoa powder, 1 teaspoon espresso powder, 1 3/4 cup all-purpose flour, 2 teaspoons cornstarch, 1 teaspoon baking soda, 2 cups chocolate chips. 
In your mixing bowl, cream together the softened butter and cream cheese. 


Then add in the sugars and mix until light and creamy.

 Add in the egg and then brewed coffee (you can use leftover morning coffee) and vanilla extract. 

Now you add in the espresso powder (if you have it) and the cocoa powder. 


You add in the remaining dry ingredients.


 Lastly, add in the chocolate chips. 

Use a large ice cream scoop get about 1/4 cup of dough into each hand and make into a ball then flatten. Do this for all the dough and place on a baking sheet or plate and cover and refrigerate at least 2 hours or up to 5 days. Chill the dough at least 2 hours otherwise the cookies will flatten and become too thin while baking. After the cookies have sat in the refrigerator for a sufficient amount of time, preheat the oven to 350 degrees F. Bake the cookies for 10 minutes.
