crockpot barbacoa

Crockpots are what I call a working wife's best friend and whether it is work outside the home or work at the home by raising your children.
Yesterday was a perfect day for some crockpot barbacoa too, it was raining at times, over cast and just a good day to not really worry about dinner until about 30 minutes before it was time to eat. 
A staple meal in our household is burrito bowls, basically everything in a burrito just without the burrito. I'm sure you have seen them or ordered them at Chipotle, or Qdoba or Cafe Rio. 
Basically it is rice then meat then beans then corn then cheese then sour cream and of course topped off with guacamole. You gotta have the guacamole!

I had some leftover chipotle peppers in adobe sauce which means searching on Pinterest for that recipe to use up this ingredients and this crockpot barbacoa recipe did not disappoint. When Sean came home for lunch yesterday, he said he wanted some already because it was making the house smell so yummy. Too bad he still had about 6 hours to wait to eat it!

This recipe is super easy to make, blend some ingredients together, put the meat in the crock pot, pour the blended ingredients over the meat, add a few more ingredients, turn on the crock pot and let it sit for several hours on low and slow. Then shred the meat to serve for dinner. How easy is that!
For this recipe, you need 1/2 small can of chipotle peppers with the adobe sauce, 1/2 small yellow onion, 1/4 cup lime juice, 1/4 cup tomato paste, 4 garlic cloves, 1 1/2 tablespoons apple cider vinegar, 2 teaspoons cumin, 2 teaspoons sea salt, 1 teaspoon oregano, 3/4 cup beef or chicken stock, 3 bay leaves, 1 teaspoon whole sloves.

In a blender or food processor, combine the chipotle peppers, onion, lime juice, tomato paste, garlic, vinegar, cumin, salt and oregano. Blend the ingredients together until smooth.






 Put the meat in the crock pot then pour the blended ingredients over the meat. Add the stock, bay leaves and whole cloves. Allow the meat to cook on low for 7 hours, then shred, then return to the crock pot to cook for 1 to 2 more hours.

That is it and you will have leftovers so enjoy that as tacos, fajitas or maybe as an actual burrito!
However you eat it, make sure you have plenty guacamole to top it, did I mention that yet?

We love our slower cooker this time of year. My hubby also loves rice bowls and recently I was able to convert him to brown rice and quinoa to make it a bit healthier. :)
