Autumn Apple Cake

I'm continuing with the fall trend from yesterday. Today's recipe is apple inspired, and perfect to make after you go apple picking, which by the way is one of my favorite childhood memories and activity that I introduced Sean to and have made it a yearly tradition. This year I can't wait to bring Caleb with us!

To make the cake, you need 3 cups of cubed apples (you can keep the skins on), 1/2 cup chopped walnuts (toast them for extra flavor), 1 teaspoon vanilla extract, 1 1/2 teaspoon ground cinnamon, 3 cups flour, 1 teaspoon baking soda, 2 cups granulated sugar, 1 1/4 cups canola oil, 3 eggs.
For the frosting, you need 2 tablespoons milk, 2 tablespoons honey and 1 cup powdered sugar.
This recipe calls for a bundt pan, which I don't have so I divided up the batter into two 9X9 pans. 

Preheat your oven to 325 degrees F. In a metal bowl, combine the apples, walnuts, cinnamon and vanilla extract. 



In your mixing bowl combine the eggs, oil and sugar. 


Then add in the dry ingredients and mix. Fold in the apple/walnut mixture then pour the batter into baking pan.
If using a Bundt pan, bake the cake for 1 1/2 hours or until a knife or toothpick inserted in the center comes out clean. My cake in the square pan took about 30 minutes. 
Allow the cake to cool in the pan, about 1 hour, before removing it from the pan. 

In a small bowl, making the frosting, stir together the milk, honey and powdered sugar until smooth. 
Drizzle the frosting over the cake then cut and serve!
