9pm cookies

On Monday night while I was watching Bachelor in Paradise, Sean mentioned we were out of ice cream. That means trouble in our household, we aren't suppose to run out of ice cream. However, I blame the lack of ice cream in the house on Sean. I went to the grocery store Saturday and Sunday and both times asked him if he needed anything specific. He told me toothpaste and cheese specifically, definitely not ice cream. The lack of ice cream wasn't enough for him to get in the car to drive to the store. So he requested I make cookies at 9pm on Monday night, halfway through the episode of Bachelor in Paradise. Thank goodness for recorded TV. I looked in my pantry for cookie fixing, we had some dried cranberries, walnuts and oatmeal. There you have the cookies: oatmeal cranberry walnut cookies. It may sound fall-like and we certainly won't see fall temperatures for a few more months but this is what I had in my pantry. 

Then after I made these cookies, Sean asked if they had any chocolate chips in them? I told him no chocolate chips in the house then he mentioned I should have made peanut butter cookies. This is what happens when a mom of a 6 month old makes cookies at 9pm, I don't think very clearly. Lucky for you though I have a cookie recipe that you can make that can be considered somewhat healthy. I mean oatmeal, walnuts and dried cranberries that is practically trail mix or granola, right?
Because it was later in the day, I halved the recipe because I would have less cookie dough to eat. 

To make these cookies you need, 3/4 cup butter, room temperature, 3/4 cup granulated sugar, 3/4 cup brown sugar, 2 eggs, 2 teaspoons vanilla extract, 1 cup flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, 2 3/4 cup old fashioned rolled oats, 1 cup dried cranberries, 1 cup walnuts.
Preheat your oven to 350 degrees F. In your mixing bowl, cream the butter. Then add in the granulated and brown sugars and mix thoroughly. Next, add in the eggs one by one and then the vanilla extract. 

Now you start adding in the dry ingredients. First, the flour, baking soda and cinnamon and mix. 


Add in the rolled oats, then the dried cranberries and walnuts. 

Scoop the cookie dough, about 2 inches high of dough and put them on the cookie sheet about 2 inches apart. 


Bake the cookies 10-12 minutes or until golden brown. Once the cookies are baked, remove them from the oven and let them cool slightly before removing them from the cookie. Then eat and enjoy!

Ha! I love that he had you whipping up a batch of cookies at 9pm. My husband is not into sweets at all. So on the rare occasion I make cookies I wind up eating them ALL!
