Salted + Caramel + Popcorn = Deliciousness

I don't know how I found this while browsing the Internet the other night, I certainly wasn't looking for it but as soon as I saw it, I knew I had to make it. Plus I wanted to make a date out of it with Sean, an evening date at home after Caleb went down for bed. A movie and a salted caramel popcorn date, yes, that was our night last night. I thought I would have to run out to the store to buy some ingredients, I didn't think I had enough brown sugar or light corn syrup but I looked and I had enough of everything convincing me even more that I had to make this salted caramel popcorn. (If you are wondering at this point if I am curious how many times I can use salted caramel popcorn in a sentence before I actually get to the recipe then you are correct). 

Ok I'll just move on and give you all the recipe and delicious looking photos instead.
To make salted caramel popcorn, you need to pop 1/2 cup of popcorn either in your air popper or on the stove top if you live in a household like mine without a microwave. 
(I made homemade popcorn before here). 

To make the caramel sauce, you need 1 cup butter, 1 cup brown sugar, 1/3 cup light corn syrup, 1 1/2-2 teaspoons sea salt, divided.
Preheat your oven to 300 degrees F.  Line a cookie sheet with parchment paper or a silicone mat. 
Pop your popcorn and put it in a big bowl for mixing later. In a sauce pan, melt the butter, brown sugar and light corn syrup. 

When the butter has melted and brought to a boil, allow the caramel to cook for 4 minutes without stirring.

After 4 minutes, pour the caramel sauce over the popcorn and stir until evenly coated. Sprinkle the top layer of popcorn with sea salt. 



Put the popcorn in the oven fore 30 minutes, and after every 10 minutes stir the popcorn around. After 30 minutes, remove the popcorn, allow it to cool then serve, eat and enjoy with your husband, your family or by yourself because it is sooo good!
