I have a confession!

Ok I admit I'm a bit of a cookie snob. When I see Sean eating store bought cookies that someone gave him or eating cookies made by someone else that I will point out is burnt on the bottom or has the look of being store bought pulled off as homemade, I get a little jealous. It is ridiculous I know, I know. I can't even believe I am admitting this straight up to you all. Go ahead and call me crazy if you 
so desire :-) Tuesday he brought home one of those cookies, those cookies that make me slightly jealous so what do I do, I made him cookies. I went straight to the place where all great recipes are found, Pinterest. I had to find a cookie so good that would make my husband never eat anything but my homemade cookies again. So I made these cookies, these brown butter salted caramel mocha cookies. I'll let that sink in for a minute..... brown butter salted caramel mocha cookies.
Ok let's make the cookies. I halved the recipe when I made these but the ingredients I list here will make a full batch of cookies. 
First, gather together your ingredients. 2 sticks (1 cup) butter, 1 1/4 cups brown sugar, 1/4 cup granulated sugar, 1 large egg plus 1 egg yolk, 1 tablespoon vanilla extract, 2 1/4 cup all-purpose flour, 2 tablespoons instant espresso or coffee granules, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 cup caramel bits, 3/4 cup chocolate chips, you can use milk or semi-sweet, coarse sea salt for sprinkling.
*Another note on the caramel bits, you can buy the caramel bits but I had some Brachs caramel pieces and I cut each piece into fours. It worked out great!


First, melt the sticks of butter in a skillet. You are browning the butter to start this cookie recipe. The butter will start to foam and continually whisk the butter at this stage. When the butter turns brown and brown bits form on the bottom of the skillet, remove the butter from the stovetop and pour it into a bowl to cool.


After the butter has cooled, you can continue making these cookies. First, preheat your oven to 350 degrees F.
In your mixing bowl, combine the butter and two sugar. Mix these ingredients together for 3-5 minutes.

Meanwhile in another bowl, add the flour, baking soda, coffee granules and salt. Give the dry ingredients a good stir.

Back to your mixing bowl, after the butter and sugars have mixed, add the egg and egg yolk and vanilla extract.

After you mix these ingredients together, add in the dry ingredients and mix.


Finally, add in the chocolate chips and caramel bits.



Use a small ice cream scoop or two spoons to create the cookies and place on a cookie sheet. I would recommend putting parchment sheet on your cookie sheet, with caramel it is sticky and could get stuck to your cookie sheet. Bake the cookies for 10 minutes or until the edges turn a golden brown. Sprinkle some coarse sea salt on the tops of the cookies then allow the cookies to cool slightly before indulging in them and indulge in them you will, trust me!
