Melt away in your mouth...

It is hot here in CA, HOT! Like yesterday was 102 and the weather forecast is predicting such warm temperatures for the next few days. I don't know about you but when the weather is hot, I don't like heavy foods or heavy cookies. That feeling of the heaviness just sits in my stomach and makes me feel sluggish. So when the weather is really hot, I made lemon cookies specifically meltaways, sometimes chocolate is a bit too heavy for me. Originally, these cookies are lime based but I didn't have any limes so lemons it was because I have a few in my produce drawer. If you want lime cookies, just substitute the lemon zest and juice for limes. 
You might classify these cookies are tea type of cookies, they are light and refreshing tasting. Let's make these cookies!

First, gather together your ingredients: 3/4 cup butter, room temperature, 1 cup confectioners' sugar, 2 tablespoons freshly squeeze lemon juice, zest of 2 lemons, 1 tablespoon vanilla extract, 1 3/4 cup all-purpose flour plus 2 tablespoons, 2 tablespoons cornstarch.

In your mixing bowl, cream the butter.


Add 1/3 cup confectioners' sugar and mix these two ingredients together until light and fluffy.

Add in the lemon zest, lemon juice and vanilla extract and mix all the ingredients together.



Now you add in the dry ingredients, the flour and the cornstarch.


Turn your mixer on to combine all the ingredients together until fully incorporated. 
Form all the dough into a log about 1 1/4 inch in diameter and wrap it in either parchment paper or plastic wrap. Freeze the dough for at least an hour or until the dough is firm. 
Preheat the oven to 350 degrees. Remove the dough from the freezer and cut it into slices, about 1/4 inch thick.

 Place the cookies about 1 inch space apart on the baking sheet. 

Bake the cookies for 13 minutes. Once the cookies are baked, removed them from the oven and let them cool slightly. While the cookies are still warm, put the cookies in the remaining 2/3 cup of confectioners' sugar. Cover the cookies completely in confectioners' sugar then place them back on the drying rack to cool. 

Cookies can be stored in an airtight container for up to 2 weeks.
