My favorite type of cookie has to have some type of chocolate in it, preferred chocolate chips. Cookies are best when fresh out of the oven, when the chocolate chips are still melted and warm, gosh those moments make me weak at the knees. Last week I was perusing Pinterest like I usually do and I came upon a cookie that peaked my interest. These cookies had buttermilk in it and lo and behold I just happen to have buttermilk in my frig so I knew it was fate that I make these cookies and of course share them with you all. It would be rude of him to hold back these delicious cookies and not share. Oh, did I mention these cookies don't have a single egg in it and you wouldn't even know.
First, gather together your ingredients.
2 cups flour, 1/2 teaspoon baking soda, 1/2 cup butter, 3/4 cup cocoa powder, 2 cups white, 1 teaspoon vanilla extract, 2/3 cup buttermilk, 2 cups chocolate chips.
Preheat your oven to 350 degrees. Melt the entire stick of butter either in the microwave or on the stove top.
While the butter is still warm, add in the cocoa powder and stir until there are no lumps and the mixture is smooth.
Add in the sugar and stir.
Then add in the vanilla extract and buttermilk and stir again.
Add the wet ingredients into your mixing bowl (if you would like) or leave in the bowl, and add in the dry ingredients, the flour and the baking soda. Combine all the ingredients together then add in the chocolate chips and mix until well combined.
Scoop the cookie batter, about 1 inch balls and place them on the cookie sheet about 2 inches apart. Bake the cookies for 10-12 minutes. Remove the cookies from the oven when baked and let them cool on the baking sheet, about 2-3 minutes before you remove them and place onto a cooling rack.
Then serve, eat and enjoy with a tall glass of milk because you will need it!
