Doubling Up...

As I mentioned in yesterday's post, last week I had to bring a dessert for our weekly bible study and I turned to my trusty taste tester, Sean, for suggestions. He said peanut butter cookies with regular M&Ms and I decided to one up him with peanut butter M&Ms. Go big or go home, eh?
With a bag of speckled Easter-inspired peanut butter M&Ms, I set out to make these delectable cookies, I mean peanut butter, chocolate then peanut butter again, what more could you want other than a tall glass of ice cold milk?
I have made these cookies before here on the post, titled under the George Clooney of Peanut Butter Cookies, so yah, enough said.

First, gather together your ingredients. 
1/2 cup butter, room temperature, 1 cup peanut butter (creamy or chunk is fine), 3/4 cup white sugar, 1/2 cup brown sugar, 1 egg, 1 tablespoon milk, 1 teaspoon vanilla extract, 1 1/4 cup all-purpose flour, 3/4 teaspoon baking soda, 1/2 teaspoon baking powder, 1/4 teaspoon salt. 

Preheat your oven to 350 degrees. 
In your mixing bowl, cream the butter first.

 Then add in the peanut butter and cream the two ingredients together. 



Add in both sugar, the white and brown.


 Then mix all the ingredients together until they are light and fluffy about 5 minutes. Next add in the egg, milk and vanilla extract. 


Mix all the ingredients until they are smooth and creamy. 
Now you add in the dry ingredients, the flour, the baking soda, baking powder and salt. Turn your mixer on and thoroughly mix the peanut butter cookie dough. 

This is the time to add in the peanut butter M&Ms or whatever you want to use, regular M&Ms, chocolate chips or nothing. Mixing the peanut butter M&Ms with my mixer caused them to break up slightly so I stopped mixing them with my stand mixer and mixed the dough with a spatula. 


Roll the dough into balls, then roll the balls into white sugar and place on the cookie sheet. 

Bake the cookies for 10-12 minutes and after you take them out of the oven, let them cool on the cookie sheet for another 10 minutes. 


Then serve, eat and enjoy and let me reconsider how I should have posted a St. Patrick's Day dessert this week and saved the Easter cookies until later in the month!
