No Chocolate Chips? Use Nutella!

As my husband is a runner, it means we always have bananas in our house, you know for the potassium. Every now and then, Sean eats a little too many bananas, which means my cooking mind starts churning of how can I use up the bananas as they are browning right before my very eyes. Sorry to disappoint, this isn't some crazy banana recipe post today, it is your common every day banana bread. 
Growing up my mom would always add chocolate chips to the banana bread but I didn't have any and frankly didn't feel like going to the grocery store. So how can you add chocolate to the banana bread since I am convinced those two flavor combinations must be paired together, you spread a thick, and I mean THICK layer of Nutella on top of the slice of banana bread. If you want to add another depth of flavor, put half Nutella half peanut butter on your slice of banana bread. Chocolate, peanut butter and banana - how could that go wrong? Let me show you have to make this delicious flavor combination!

First, gather together your ingredients. 2 cups all-purpose flour, 3/4 teaspoon baking soda, 1 cup sugar, 1/4 cup butter, softened, 2 eggs, 1 1/2 cup mashed bananas (about 3 bananas), 1/3 cup plain low-fat yogurt, 1 teaspoon vanilla extract.

Preheat your oven to 350 degrees. Cream the butter in your awesome stand mixer (remember last Thursday?) and once the butter is creamed add in the white sugar and cream these two ingredients together. 



Add in the eggs, one at a time, mixing the ingredients between each egg addition. 


Now add in the yogurt, vanilla extract and mashed bananas. 




Mix all the wet ingredients together well before you add in the dry ingredients. After the mixing, add in the flour and baking soda and give the banana bread batter one final mix. In your prepared bread pan, spoon all of the batter. 


If you do want to add in walnuts or chocolate chips, add then after you add in the dry ingredients. Bake your banana bread for 1 hour or until a knife stuck in the middle comes out clean, meaning nothing, absolutely no batter sticks to the knife. Allow the bread to cool slightly before you remove it from the pan. 



Then devour your banana bread, plain, with Nutella or with peanut butter, whatever your preference. However do make this banana bread, do it, just do it!

You know what someone recommended to me that I thought was inspired? I chop up a few bananas before they turn brown and freeze them. Then I have banana chunks on hand to toss in smoothies or whathaveyou. The other thing I saw on Pinterest was to wrap the tops in plastic wrap to keep them from browning as fast. I have no idea if it works, but it might be worth a try!
