Christmas Cookie Week - Day 1

Here it is, the long awaited, much anticipated, second annual Christmas cookie week on my blog. I did it last year, 5 days, 5 different Christmas cookies and had so much fun, I had to repeat Christmas cookie week. Don't worry, I didn't eat all of the cookies myself, Sean took some to his Christmas work party, and then our church was having a Christmas cookie and hot cocoa party for a non-profit organization they partner with so these cookies went to a great cause. 
The first cookie to kick off this week is chai spice oatmeal cookies and because chocolate makes everything better, I added chocolate chips into the dough for some chocolate gooey-ness.
First, gather together your ingredients: 1/2 cup (1 stick) butter, room temperature, 1/2 cup light brown sugar, 1/4 cup granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon apple cider vinegar, 1 egg, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground cloves, 1/2 teaspoon ground cardamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground ginger, pinch of white pepper, 1/2 teaspoon baking soda, 3/4 cup all-purpose flour, 1 1/2 cup rolls oats.

*don't be afraid of the apple cider vinegar in the recipe, also because of the price of ground cardamom, between $11-17 for a jar, I went cheap and left out this ingredient.

Preheat your oven to 350 degrees F. In your mixing bowl, cream the butter. 


Add in the light brown sugar and granulated sugar and mix these three ingredients together until they are light and fluffy.


 Then add in the vanilla extract, egg and apple cider vinegar. 

Turn on your mixer to mix all the ingredients together well. Now add in all the spices and then mix.


 Then you add in the dry ingredients, the flour and the baking soda. 

After you mix these ingredients into the wet ingredients then add in the rolled oats. Once, the oats are mixed into the dough if you want to add in the chocolate chips, put them in now. I put in 1 cup of chocolate chips. 
Scoop dough into 1 inch balls and drop them onto your parchment-lined or non stick baking sheet. Bake your cookies for 12 minutes. After they are done baking, remove them and let them cool on the baking sheet for about 6 minutes. Once the cookies have settled on the baking sheet, then let them continue cooling on a baking rack. 




Then serve with a great holiday drink, then eat and enjoy and be sure to come back tomorrow for Christmas Cookie Week Day 2!

Great start to cookie week. Love that you added chocolate chips. Also, if you have a Sprouts near you, they have spices in jars and you take as much or as little as you need, WAY cheaper route! I did that this weekend, and it saved me a ton! I spent $0.75 on spices instead of $25+ for all the jars of spices I needed.
