Yes, it is Halloween season so that is why I said vegetarians be aware. Vegetarians, you should be scared, very scared of this recipe. There is a secret ingredient in it that you shouldn't eat. You should even be afraid of. Now everyone else might think I am crazy but these cookies have bacon in them, yup, I have baked bacon chocolate chip cookies. I am nuts?! Maybe! But there is nothing like a sweet and salty combination. This cookie has both. I don't want to tell you how the cookies are, I want you to make them for yourself and judge! But remember salty and sweet combination can be amazing like chocolate covered pretzel rods, a donut with maple frosting topped with bacon.
Lets get on to the recipe! up)
First, gather together your ingredients. 8 slices of bacon (chopped up into pieces), 1/2 cup chocolate chips or chopped chocolate, 1 3/4 cup flour, 1/2 teaspoon baking soda, 3/4 teaspoon baking powder, 1/2 cup plus 2 tablespoons of butter, 1/2 cup plus 1 tablespoon white sugar, 1/2 cup plus 2 tablespoons brown sugar, 1 egg, 1 teaspoon vanilla extract.
Chop up the 8 slices of bacon and pan fry then.
Once the bacon is cooked, drain them on paper towels to absorb some of the extra fat. After this step you are ready to make the cookie dough.
In your mixing bowl, cream your butter.
Add in the white sugar and then cream again and then add the brown sugar and cream again until the butter and sugars are light and fluffy.
Next, add in the egg and mix well.
Add in the vanilla extract and then cream well. Now you add in the dry ingredients, the flour, the baking soda and baking powder.
After the ingredients are thoroughly mixed, now you get to add the good stuff, the chocolate and bacon.
After all the ingredients have been thoroughly mixed, put all the dough in another dough, cover it and let it sit in the refrigerator for 24-36 hours.
This allows the flavors to marry together well and makes for a tastier cookie. You can cook the cookies at this point if you can't wait however.
(I tried both, baking cookies right after the dough was made and then waiting 36 hours, the waiting definitely produces a better tasting cookie)
Preheat your oven to 350 degrees. Scoop cookie dough and place them on the greased or lined with parchment paper cookie sheet.
Sprinkle some sea salt over each cookie.
Bake the cookies for 18-20 minutes and let them rest on the cookie sheet for 10 minutes before you remove.
Then get yourself a tall glass of milk and serve, eat and enjoy!

Bacon is the main reason why I'm not a strict vegetarian. There is just nothing like real bacon.
So I don't know if you watch Parks and Recreation, but if you do you can understand that Ron Swanson is my husband's hero. (The man cosumes only meat and whiskey) I think you made this recipe for every man alive (and secretly every woman). I think I'm going to make these, not tell my husband there's bacon in them, and when he bites in I will be declared best wife ever. Yep that sounds like a plan.
