Blueberry Cookies

Have you ever had fresh fruit in your cookies? I can't remember ever having one but I was intrigued at the idea of having fruit especially blueberries in a cookie. I wouldn't feel as guilty about being a blueberry cookie as I would if I ate a chocolate chip cookie so I attempted a blueberry cookie and here are the results.
The recipe I found was on the State of Georgie's Blueberry Commission. If I were to work for a state's commission, I'd like to work for their produce commission. Would one of the perks be getting to eat blueberries any time I want? Ok on to the recipe.
First, gather together your ingredients. 1 cup (2 sticks) butter, 1 cup brown sugar, packed, 1/4 cup white sugar, 1 egg, 1 teaspoon vanilla extract, 2 cups and 3 tablespoons of all-purpose flour, 3/4 teaspoon baking powder, 1/3 teaspoon baking soda, 1 cup blueberries.


Preheat your oven to 350 degrees.
In your mixing bowl, cream the 1 cup butter. After you creamed the butter, add in the brown sugar and the white sugar and cream these three ingredients together until fluffy. 


Add in the egg and the vanilla extract and turn on your mixer for one last good mix of the wet ingredients. 


Now you add in the flour, baking soda and baking powder.

 Be careful when you turn on the mixer or else you will get a cloud of flour. Once the dry ingredients are completely incorporated in the wet ingredients, take the mixing bowl off of the mixer. 

You will not use the mixer to incorporate the blueberries. Add in the 1 cup of blueberries and as you can see, I mixed the blueberries into the dough with a spatula. 



This preserves the berry as whole. 
Scoop the dough into your pre-greased or non-stick cookie sheet. 

Bake your cookies for 10-12 minutes and once they are done cooking, remove the cookie sheet from the remove.

 Let the cookies rest a little bit on the pan before you remove them, then serve, eat and enjoy and thank me later when you eat these and don't feel guilty eating them!

Oh these look so good! I've never had fresh fruit in cookies before, just dried. But blueberries are good in everything so I'm not surprised that these would be delicious!
