Breakfast for Dinner

Yesterday morning before I left for work, I opened up the refrigerator and heavily sighed what am I going to make for dinner? I know all of you have been in that position once or twice and Sean walked by at the appropriate time and said let's do breakfast for dinner! He is a lifesaver :-) 
On the menu for our breakfast for dinner, sausage, scrambled eggs and pancakes, relatively simple right with not a lot of scrubbing of the pots and pans (I have a secret though, our trade-off is I make dinner, Sean cleans up the dishes, best arrangement we ever made!)
Cook the sausage or breakfast links on the skillet, easy.
Make scrambled eggs, easy.
Make the best ever pancakes, now where do I find a recipe for the best ever pancakes??
p.s. People, please do yourself a favor and use real maple syrup on your pancakes, your tastebuds will thank you.
Anyways so after some perusing on the Internet, I came across a recipe that sounded pretty good.
For this recipe, you need 2 cups of all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 3 tablespoons sugar, 2 large eggs, 2 cups buttermilk, 4 tablespoons of melted and slightly cooled butter.

In a large bowl add the dry ingredients, the flour, baking powder, baking soda and sugar.

In a smaller bowl, combine the wet ingredients, eggs buttermilk and melted butter.


Whisk in the wet ingredients into the dry ingredients and give it a good mixing until there are so flour lumps in the batter.




 Preheat your oven to 200 degrees if you don't plan on serving your pancakes right away. 
Melt a little bit more butter on your griddle pan, and when you sprinkle a few drops of water on the pan, they should bounce and sizzle then your pan is ready for pancake-making!
I used a measuring cup, 1/2 cup, for this process, fill the cup up with batter and pour it in one place on the griddle pan. Use the back of the measuring cup if you want to spread the batter around a bit.

Wait for bubbles to appear on the surface of the pancake, then you are ready to flip!
Real quickly with your awesome flipping technique, flip those pancakes over, cook them for a little bit longer but not too long and then serve the pancakes or pop them in your warmed oven until they are ready to serve.


Then spread some butter, some REAL maple syrup, then serve, eat and enjoy, your breakfast for dinner pancakes accompanies by scrambled eggs, sausage links, and of course orange juice to truly make it breakfast!

I've been trying to convince the hubby that breakfast for dinner is always acceptable! He doesn't think so. These pancakes look so so yummy!

anytime i ask my daughter what she wants for dinner, she says, "brinner!" this is her favorite meal. i usually use pre-made pancake mix, but i will have to try this!

My husband always does breakfast for dinner because that is the only food he knows how to cook! And I've always wanted to try making pancakes from scratch but we have epic amounts of pancake mix I'd feel irresponsible if we didnt use that up first!

Yum! Those pancakes look amazing! I am a big fan of adding chocolate chips and whipped cream on top to my pancakes (sweet tooth alert)! You live in California right? Or maybe I completely made that up I can't remember :) Anyways there is a breakfast place called Snooze in San Diego and LA and they have several in Colorado as well. They make Red Velvet Pancakes and they are the greatest thing in the whole world!
