I love cinnamon rolls but they can be too time consuming to make and I prefer not to take them out of a can. But I saw this recipe over and over on other blogs so I knew I had to make these. And you should to, you will not regret it! The nice thing about this recipe is you make these cinnamon rolls the night before, so in the morning you just have to proof the cinnamon rolls then bake them, then eat and enjoy! All the work is done the day before so you literally have to wake up the day you want to eat the cinnamon rolls and pop them in the oven!

First, the ingredients for the dough: 4 egg yolks, 1 whole egg, 1/4 cup white sugar, 6 tablespoons butter, melted, 3/4 cup buttermilk, 4 cups of flour, 1 package dry yeast, approximately 2 1/4 teaspoons, 1 1/4 teaspoon salt,
Ingredients for the cinnamon sugar filling: 1 cup packed brown sugar, 1 tablespoon cinnamon, 1 1/2 tablespoon butter, melted.
Ingredients for frosting: 1/4 cup cream cheese, softened, 3 tablespoons of milk, 1 1/2 cup powdered sugar.
To make the dough, using a whisk attachment on your mixer, whisk together the egg yolks, the whole egg, butter and buttermilk.
Add 2 cups of flour, the yeast and the salt until the mixture is moistened and combined. Change out the whisk attachment for a dough hook. Then add the remaining flour except for 3/4 cup of flour, and knead the dough for about 5 minutes until the dough pulls away from the sides of the bowl.
Add more flour if you need to, I definitely had to. Lightly oil a large bowl. Put the dough into that bowl, cover it and let it rise for about 2 to 2 1/2 hours for the dough to double in volume.
For the filling, combine the brown sugar, cinnamon and salt. Mix well. Or you can do what I did, I melted the butter and put it into the cinnamon sugar mix so it was like a paste.
Butter a 9X13 dish. Roll the dough onto a floured surface into a rectangular shape.
For these cinnamon rolls, I used some of the pecan pumpkin butter I received from Williams Sonoma, on half of the cinnamon rolls.
For the cinnamon sugar mixture, brush the melted butter onto the dough and then
sprinkle the cinnamon sugar mixture.
Leave a border without filling so when you roll up the dough, it will stick. Roll up the dough long side, roll it up tightly. Use a serrated knife to cut individual pieces about 1 1/2 inches, you should cut about 12 pieces. Arrange rolls cut side down, cover the dish with plastic wrap and pop it into the refrigerator overnight.
The next morning, take the plastic wrap off the cinnamon rolls and place them in a cold oven on the top rack. On the bottom rack, fill a shallow pan 2/3 full of boiling water for about 30 minutes. You are proofing the cinnamon rolls. After the proofing, take the water and the cinnamon rolls out of the oven.
Preheat the oven to 350 degrees. Then place the cinnamon rolls back in to the oven to cook for 30 minutes. While the cinnamon rolls are cooking, make the icing by creaming the cream cheese, then add the milk then the powdered sugar until smooth.
Spread over the cinnamon rolls when they are done cooking, then serve, eat and enjoy!

My sister makes cinnamons rolls very similar to these, which she makes the night before and we freshly bake in the morning...love the icing on yours! YUM!

My mother use to make those pillsbury canned cinnamon rolls every Saturday when we were growing up! I bet homemade ones taste even better but I always shied away because it seemed like it would be too complicated but you make it look pretty darn easy! Looks delicious:)

Oh my gosh. Those rolls look delicious!! I love that pumpkin butter! I used to work at WS and we used to make those pumpkin dessert squares all the time in the fall. So yummy!! :)
