*Before I give you the yummy recipe of the week, I want to talk a little bit about faith and my thoughts on all that occurred last week in the life of my Sean and I with his new opportunity. We have been praying for changes for God to provide new some sort of change in our life. And like a little child, when God provided the change, I pouted, I gave a temper tantrum, why because I was digging my heels in the dirt and saying wait, God, that isn't the change I was asking for. Ironic, isn't it? We ask for change, and because our plans are never God's plan, we pout when it didn't happen the way we intented, but that is faith, faith is trusting God in the change He has provided, and trusting that the child-like attitude I have will grow up one day and when I face another similar situation in the future, I will look at it through my adult eyes.

This week's lovely treat is a nectarine and blueberry galette.
What is a galette you may ask? Basically it is a form-free pie that isn't baked in a pie dish. That means that regardless of how it looks it doesn't matter, because there isn't a certain look it is suppose to have because it is form-free. Now don't you feel free and ready to bake? Another great thing about a galette is you can use whatever form you want and is in season, you can be an apple one, a raspberry, plum, the possibilities are endless! Now lets bake!
First, gather all your ingredients. For the crust you need, 2 cups of all purpose flour, 1/2 teaspoon of salt, 3/4 cup shortening, 1/3 cup ice cold water. I know in the picture I have butter but then I decided to stick with the recipe and use shortening. It is usually easier to handle than butter, but it is your preference.
For the fruit filling, you need 4 large nectarines, sliced. 1 1/2 cup of blueberries, 1/2 cup sugar, 2 tablespoons of lemon juice, 1/3 cup of brown sugar, 1/2 cup of flour, 1/2 teaspoon of cinnamon, 1/4 cup butter, softened.

Preheat the oven to 400 degrees.
To make the crust, put the flour and salt in a bowl. Put the butter or shortening in the flour mixture, and cut it down so mix up the ingredients together until the mixture is crumbly. Then slowly add the water, working the dough mixture together a bit at a time. Take the dough out, divide it in half and roll it out on your counter. Floor the counter and your rolling pin first!
Then leave the crust off to a side and prepare the fruit filling.

Using your mixer, combine the flour, the brown sugar, the cinnamon and the butter for a crumbly topping.
In the center of the rolled out dough, mound the nectarines and blueberries, leave a 2-inch border because you will fold it over to form the crust, pleat the dough if you need to. Then sprinkle the crumble topping on top of the fruit.
Then bake your galette for 40-45 minutes or until the crust is a golden brown color and the fruit has solidified. Pull the galette out, let it cool for about 10 minutes, then serve warm.

And when I got out of the shower this morning I saw the two cutest dogs all curled up next to each other, fortunately I have my camera nearby. Aren't they adorable!

I appreciate and loved your honesty about faith. I find that I struggle with much of the same things, especially right now as I pray for a new job and the ability to move out of my parents house. I keep getting changes but they are not what I want! Thank you for always being so real, and staying true to yourself!

And I love what you had to say about God teaching us lessons. It can be difficult to pray for something and have it turn out in a completely different way than you expected. I guess that's all part of the journey though, right?

I think we all can be a little stubborn when it comes to following God's plans for us. It's frustrating when things don't go our way because we want to know if that's really in His plan or if it's something we're trying to force to happen. I know that you will feel at peace soon with whatever changes come your way :)
