The George Clooney of Peanut Butter Cookies

Correct me if I am wrong but I have not posted a peanut butter cookie yet on this blog?! How can that be, it is a classic cookie just like sugar cookies or chocolate chip cookies or oatmeal raisin. Well that all changes today! Actually you will get the original version and then a variation of chocolate chips thrown in there, has do you like them cookies?

My personal preference for cookies is chewy, chewy, chewy. There is a peanut butter cookie recipe that calls for just three ingredients, three ingredients and you have cookies made! However, this is no such recipe because that three ingredient recipe is not chewy.
This recipe is and you will love it.

First, gather together your ingredients.
1/2 cup butter, softened, 1 cup peanut butter (chunky or smooth is fine), 3/4 cup white sugar, 1/2 cup firmly packed brown sugar, 1 egg, 1 tablespoon milk, 1 teaspoon vanilla extract, 1 1/4 cup all-purpose flour, 3/4 teaspoon baking soda, 1/2 teaspoon baking powder and 1/4 teaspoon salt.
*side note, I didn't have any brown sugar in my cupboard and didn't have time to run to the store so I used all white sugar and they still turned out wonderful.

 
Preheat your oven to 350 degrees. 
In your mixing bowl, cream together the peanut butter and softened butter.



When the two ingredients are mixed up, all smooth and creamy, add in both sugars and mix until the ingredients are fluffy.

Next, add the egg, milk and vanilla extract and mix until these wet ingredients are smooth and creamy.



Now, add in the flour, the baking soda and baking powder. Then mix, mix, mix until all the ingredients are completely incorporated.

Here is where the variation by adding in chocolate chips can occur. I divided up half of the dough, scooped it out of the mixing bowl and then added 1 cup of chocolate chips to the dough left in the bowl.


Roll the dough whether plain or with chocolate chips into 1 inch balls and then roll the balls in white sugar before you place them on the greased cookie sheet.


 Place the balls about 2 inches apart, they will spread while baking but won't completely flatten out. 

Some peanut butter cookies have that signature criss-cross imprint on the top but these cookies don't have those, when baking they will naturally flatten out a little.
Bake the cookies in the oven for 10-12 minutes and when theya re baked take the sheets out of the oven. Let the cookies rest for 3 minutes before you remove them from the baking sheet. After 3 minutes, then transfer them to a cooling rack.


 Then serve, eat and enjoy with a tall glass of milk (or soy milk!).

(Did you know that if you ever run out of brown sugar you can make your own by mixing white granulated sugar with molasses? It's that simple!)
