Sunday morning treat - Cranberry Coffee Cake

I love cranberries! I love the brightness of their color, the tart of the berries, and they are such a perfect holiday treat whether used in baking or for home decoration. This Sunday morning I have a recipe for cranberry coffee cake for you. Just in case I need to convince of more reasons to make this coffee cake, I have provided some health benefits of cranberries source.
Suggested Health Benefits Cranberries

  • Urinary Tract Infections - Many people take cranberry supplements to prevent urinary tract infections caused by bacteria. Specifically, the proanthocyanidins found in cranberry appear to block the adhesive strands on the E. coli bacteria from sticking to a surface whereby inhibiting their ability to stick to the cell walls of the uterus and bladder.
  • Reduction of Dental Plaque - It is believed that cranberry juice can inhibit the aggregation of bacteria that cause dental plaque.
  • Anti-Cancer Activity - Based on evaluation of several vitro screening tests, it has been suggested that the proanthocyanidin compounds found in cranberry may exhibit some anti-carcinogenic activity.
  • Heart Disease - Cranberry extract has been shown to inhibit low density lipoprotein oxidation. Since this process is believed to be part of what can cause heart disease, prevention of oxidation through cranberry supplementation can potentially reduce the risk of heart disease.
  • Kidney stones - Some medical professionals and specialists believe that quinic acid abundant in cranberry may help to prevent the development of kidney stones.
Ok on to the recipe! First, gather your ingredients for the cake. 8 tablespoons (1 stick) butter, softened, 1 cup white sugar, 1 eggs, 1 cup sour cream, 1 teaspoon vanilla extract, 2 cup all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 2 cups fresh cranberries.


For the crumble topping, 1/3 cup dark brown sugar, 1/3 cup white sugar, 1/2 teaspoon ground cinnamon, 1/4 teaspoon nutmeg, 1/2 cup melted butter, 1 3/4 cup flour. 


Preheat the oven to 350 degrees. Grease your baking dish, 9X13 pan. 
In a mixing bowl, cream the butter and sugar together.



 Add the eggs one at a time.
 

Then add the sour cream and vanilla and mix thoroughly.

Add in the dry ingredients, the flour, the baking soda and the baking powder and incorporate the ingredients together well. 


Add the cranberries into the cake mixture. 


Pour the coffee cake mixture into your greased baking dish.


Make the crumble mixture then by combining all the dry ingredients into a small bowl. 



Add in the melted butter and  mix until it is crumbly looking like large clumps of wet sand. 
Sprinkle this mixture on top of the cranberry coffee cake. 



Pop in the oven for 50-60 minutes or until a toothpick comes out clean when stuck in. Take out of the oven, let it cool for about 5 minutes, then slice, eat and enjoy! Happy Sunday!

Oh this looks so yummy. I've never really baked/cooked with cranberries but I do love cranberry juice. How do you tell if the cranberries are good/ripe fruit to buy?

This sound fantastic. I'm not going to lie, I was a little turned off when it said "coffee" cake (I hate coffee.... gasp), but by the end it looks positively devine. Another must try!!
