Thankful Thursdays - First Edition and peach pie!

Welcome ladies to a very special first edition of Thankful Thursdays. The aim of this series and there is a linky tool at the bottom to add your entry is to help us recognize the many blessings we have in our life. To make it easier to say the things we are thankful for rather! Again, what I ask is simply at the top of your post is start with an asterisk * and mention what you are thankful on that particular Thursday.

Here I go!

That leads into my Tuesday Treats of the week which I mentioned
would be posted today and this week's recipe is peach pie!

First gather your ingredients. I am making a homemade crust, but store bought is perfectly fine too. You need two pie crusts for this recipe. For the crust, you need 2 cups of all purpose flour, 1/2 teaspoon of salt, 3/4 cup shortening, 1/3 cup ice cold water. I know in the picture I have butter but then I decided to stick with the recipe and use shortening. It is usually easier to handle than butter, but it is your preference.

For the pie filling you need 9 peaches, peeled and thinly sliced, 1 1/2 cup of sugar, 8 dashes of cinnamon, 5 dashes of nutmeg, 1 teaspoon of vanilla, 3 tablespoons of flour and 4 tablespoons of butter, not room temperature,
cut into small cubes.

Heat the oven to 400 degrees. Then make the crust, in a bowl put the flour and salt. Put the butter or shortening in the flour mixture, and cut it down so mix up the ingredients together until the mixture is crumbly. Then slowly add the water, working the dough mixture together a bit at a time. Take the dough out, divide it in half and roll it out on your counter. Floor the counter and your rolling pin first!


Be sure not to handle the dough too much.
In a 9" pie pan, lay out one rolled out piece of dough and cut away any excess dough from the edges. 
Then you are ready to make your filling.

In another bowl, add together the sliced peaches, sugar, cinnamon, nutmeg, vanilla and flour.

Yummy peaches!


Gently fold the ingredients together in a bowl and then pour it in your pie crust. Add your cubed 2 tablespoons of butter over the filling, then add the over rolled out crust on top of the filling.


 Crimp the edges together, make a few slits in the crust with a knife. On the top of the crust sprinkle your remaining 2 tablespoons of cubed butter, and sprinkle with a little bit more sugar and cinnamon.

Put your pie into the oven for 15 minutes, then turn down the oven to 350 degrees and bake for another 30-40 minutes or until your pie is golden.



Of course a la mode!
Take it out, let your pie cool a bit then, slice, eat and enjoy!
