Tuesday Treats...brought to you by lots of lemons

I was the lucky recipient again of lots of lemons from my co-worker's tree, she said she didn't even have to pick all the ones she gave me, they fell on the ground and she gave them all to me. You will get no complaints from me at all! All the lemony desserts I can make, or lemonade or grill a salmon with lemon slices on the top.
See I told you I had lots of lemons!


The possibilities are endless! This week's Tuesday Treats is a lemon meringue pie. I loved lemon meringue pie as a child, I would request my mom bake me one for my birthday instead of a cake. It is the tartness of lemons that I love, a little bit of sweet and a lot of tart.  I really looked forward to making this pie because it brings back happiness in me as a child while eating a  completely delicious pie!

Gather all your ingredients together and pre-bake your pie crust. After you have baked your pie crust, turn the oven temperature to 325 degree. Here are the ingredients.

For the pie filling, you need 1 1/2 cups sugar, 1/3 cup cornstarch, 1 1/4 cup of water, 1/2 cup of lemon juice (freshly squeezed is preferred!), 3 tablespoons butter, 2 teaspoons of lemon zest.
 For the meringue topping, you need 4 egg whites, 1/2 teaspoon of cream of tartar, and 1/2 cup of sugar. 
To make the filling, in a saucepan, combine the sugar and cornstarch.
Gradually add the water in and stir.


Cook over medium heat, about 7-9 minutes until it is fully boiling. While the mixture is coming to a boil, beat the four eggs, zest your lemon and squeeze them for the juice.



Once the sugar and water mixture has come to a boil, put 1/2 cup of it into the beaten eggs. Then give that a quick stir and pour it all back into the saucepan until the mixture thickens. 
Once it has thickened, then pour the lemon juice, throw in the butter and the lemon zest and stir!
Remove the saucepan from the heat and set the mixture aside while you whip
the egg whites to make the meringue.
In your mixer, pour the 4 egg whites and the cream of tartar and give it a good whip until foamy.


Pour the filling into the pie crust and top the filling with the meringue.
Bake the pie for 25-30 minutes, then remove the pie, let it chill in the refrigerator for at least 2 hours,
then slice, eat and enjoy!

Oh yah and did anyone watch the Bachelorette last night? Ryan was totally blindsided and while he wasn't my favorite, was it fair to keep him on so long if you didn't feel that connection? I'm sorry but Ashley is kinda getting on my nerve and I wouldn't have selected any of the remaining guys she has left, anyone have any thoughts about last night's episode?

That's a lot of lemons! My parents have a lemon tree in their backyard (oh the benefits of living in Southern California) and I always ask for lots of lemons when they come to visit me since they don't grow very well here in Missouri :)

If you ever have way too many lemons, squeeze some of it into your dishwasher when you run a cycle to clean it out and keep the dishes sparkly (it is like Jet Dry but more eco-friendly)! Or microwave half of one in a bowl, remove and then wipe down the microwave for easy cleaning that smells good too!

Oh my gosh I have so many things to say about this post!! First of all - I am sooo impressed with that lemon meringue pie! I've wanted to make that for years but have never tried it. I've always thought it looked too hard, but your recipe looks great and definitely doable! Thanks for inspiring me!!

Second - I completely agree about the Bachelorette! I'm so unhappy with this season, I feel like Ashley doesn't really like anyone! Except Bentley...and what a disaster that was! I still can't help but watch it anyways...it's addicting!

I totally agree with you about the Bachelorette. Ryan got on my nerves the whole time and I don't think she should have kept him that long...she should have at least given him an 1-on-1 earlier on so she could have felt out the relationship and sent him home. His surprised face was pretty funny though! Ashley is getting on my nerves and I'm ready for her season to be over! I did really like JP though, until he got all crazy with jealousy this week!
