Who loves bacon and avocados in a pasta dish with an icy cold beverage?

    If the summer heat isn't coming to you yet, just wait it will. Our June gloom in California was recently broken up by our first heat wave last weekend. That means lots of refreshing, ice cold drinks, meals or side dishes that can be made in the morning so I don't heat up the kitchen during the hottest parts of the day. I went to Walmart recently to purchase both an ice cold beverage, Gold Peak Tea, and Barilla Pasta in the "Blue Box" to make a summery pasta dish.     For the pasta dish I used Barilla Pasta in the "Blue Box" which is the perfect pairing because it is Italy's number #1 brand of pasta, and makes for a quick and easy meal or side dish. The summer pasta dish is bacon avocado pasta and the best part, this pasta salad doesn't have mayo or another creamy base you don't need to worry about refrigeration plus this pasta dish can be served warm or refrigerated, your choice!



    To make this easy summer pasta dish with Barilla pasta, you need 12 ounces pasta (I used farfalle but rotini or fusili would work great) 2 medium avocados, 4 strips of bacon,  1/3 cup chopped red onion, 1 large Roma tomato, 1/4 cup olive oil, 1/4 cup Parmesan cheese, zest of 1 lemon, 2 tablespoon freshly squeezed lemon juice, salt, pepper.

    Cook your pasta according to the directions on the box. While the pasta is cooking, cut the avocados in half, take the seed out and cube them. Chop up the tomatoes and the red onion.  Chop up the bacon into pieces.




    In a separate small bowl, add the olive oil, the Parmesan cheese, lemon zest, lemon juice and salt and pepper.

    When the pasta is cooked, drain it and return it to a large bowl. Add the avocado, red onion, tomato and bacon. Stir to mix all the ingredients.

    Then add in the olive oil mixture and on final stir. Just before serving, I like to chiffonade some basil and sprinkle some Parmesan cheese if you fancy more. Serve this pasta salad warm or cold, your preference! That is it!
