What to do On December 30...

How did you spend the last few days of the year? Did you relax, rent a movie each night, run some errands and then decide that on December 30, it would be a good day to make homemade pirogi? Because if you are Sean and I, that is how we spent the last few days of 2012.
Yup, so homemade pirogis stuffed with potatoes, onions and cheese. It was my first taste ever of pirogies and thanks to the many pirogi this recipe made, it won't be my last because of the bagful of pirogi we put in the freezer. You can only eat so many pirogies in one sitting you know.
The serious face of a master pirogi maker

After the dough was made, we cut out circles with the drinking glass and then rolled the circles out for thinner dough

Stuff those suckers with mashed potatoes, onions and cheese, stuff them 'til they can't be stuffed no mo'

Press the ends of the dough with the fork to keep the filling in, don't want the pirogi filling to come out during boiling.

Cook the pirogi in boiling water until they float then remove them.
Kip gives the pirogies a thumbs-up!

After the pirogies are boiled, rinse them in a colander with warm water.

Melt some butter in a pan to crisp up the pirogies a bit before serving.

Pirogi making involves the entire family.

The finished plate of pirogies then serve, eat and enjoy them with sour cream!

Yummy! These are one of my favorites! There's a lil shop around here that sells all different kinds- they even have buffalo style ones that are stuffed with chicken, buffalo sauce and cheese. We fry them up and dunk them in Blue Cheese dressing!

I had to work every day except for New Years Day, so that was kind of a bummer but we still got in a fair amount of cuddling and sleeping. :-) Happy New Year!
