Oh I am posting a lot of food this week aren't I? Is anyone opposed to that? Why am I doing this because I want to feed your souls ladies and then make you wish you were my next door neighbor because I would invite you over all the time to help me eat the goodies that I bake!
Today is another Improve Cooking Challenge and the two required ingredients were lemon and sour cream. I love citrusy desserts, lemon meringue pie, key lime pie so I wanted to take this opportunity to expand my pie repertoire. Today's recipe, lemon sour cream pie!
For this recipe you need a single pie crust and you know that I don't go out and unroll a pie crust from a box. I am showing you how to make a pie crust, really, it is easy!
First gather together your ingredients (this recipe makes just one crust, double it if you need two crusts):
1 cup flour, a pinch of salt, 6 tablespoons of shortening, 8 teaspoons of ice cold water.
To get your water really cold, I just a few ice cubes in the water and just it sit before I add in the water. Ice cold water is key to making a good pie crust, it binds all the ingredients together better.
In a bowl, add the flour and the salt.
Then add in the shortening and mix the ingredients together until it is the consistency of lumps of wet sand.
Then add in your water and mix the ingredients just come together.
On a floured surface gently knead the pie dough a few times. Then roll out the crust, be sure the surface is floured so the dough doesn't stick!
This is how I transfer the dough to the pie plate. I roll up the dough around the rolling pin and then roll it back out over the pie plate.
Before you put in the filling you gotta bake the crust, because the filling you will cook on the stove top, it won't go into the oven. Set the oven to 450 degrees and line the crust with a foil and bake for 8 minutes. Remove the foil then bake for another 5-7 minutes. Pull the crust out from the oven and let it cool.
Gather together your filling ingredients.
You need 1 cup sugar, 3 tablespoons and 1 1/2 teaspoon corn starch, 1 cup milk, 1/2 cup lemon juice, 1 tablespoon grated lemon peel, 3 egg yolks, lightly beaten, 1/4 cup butter cut into cubes, 1 cup sour cream, 1 cup heaving whipping cream.
In a stove-top pot, pour in the sugar and the corn starch and stir.
Add in the milk and lemon juice and lemon peel.
Finally add in the lightly beaten eggs.
Stir all the ingredients together and cook on the stove until the filling has thickened.
Then add in the cubed butter.
Remove the pot from the stove and let it cool to room temperature.
Once the filing has cooled, add in the 1 cup of sour cream and incorporate completely.
Pour the filling mixture into the cooked pie crust and then top with whipped cream.
Whip up your whipped cream and then top the lemon filling.

this looks so delicious! I love your idea of rolling the pie crust on the rolling pin. I usually fold it in half and then half again in order to pick it up and then unfold it, but the rolling pin would work even better! I'm going to try it!

Mmm, this looks delicious! Key lime and lemon are a couple of my favorite pies. I'm impressed you made the crust too, I'm lazy when I make pies and use the pre-made crusts. Someday I'll make one completely from scratch!
