Happy Monday all! I am excited because this week I have deemed Christmas cookie week on my blog. Each day a new Christmas cookie recipe and photos of course! Also a pinned photo of some creative Christmas packaging for these lovely cookies. Just want to help you all during this Christmas season.

Lets waste no time in getting to the first recipe. This cookie is always a staple in my household growing up, thumbprints usually filled with raspberry jams and rolled in chopped up walnuts. You can use any type of jam you have or nuts too. This year I had on hand blackberry jam and pecans so that is the combination I used.
First, gather together your ingredients. You need 1/2 cup butter, room temperature, 1/4 cup white sugar, 1 egg, separated, 1/2 teaspoon vanilla extract, 1 cup flour, 3/4 cup chopped nuts(whatever kind you choose), jam.
Preheat your oven to 350 degrees.
In your mixing bowl, cream the butter and then add in the white sugar.
Add in the egg yolk and save the egg white (you will need this later), then add in the vanilla extract and mix these ingredients together very well until it is light and fluffy.
Pour in the flour and get it a good mixing, if the dough is too wet, add a bit more flour.

Set up your dipping and rolling station. On your right put the bowl of the egg white from when you separated it earlier, then moving from right to left, place your bowl of chopped up nuts and then finally your baking sheet on the left.
Roll your dough into balls about 1 inch, drop the dough ball in your egg white, then move it over to your nuts bowl. Roll the ball around the nuts and then place it on your baking sheet. Repeat this process until all the dough has been formed into balls.
With your thumb press a slight indentation just enough for a little jam to rest.
Continue to make indentations with your thumb, and then spoon a little jam into the indentations.
Bake your cookies into the oven for 12-15 or until cookies are set. Take the cookies out of the oven, set them on a rack to cool then eat and enjoy! See you tomorrow!
