Happy Sunday! This weekend, Sean's best friend and his wife came into town and stayed with us. I'm sure y'all can guess that I love to entertain and I wanted to have a delicious breakfast for our guests. I have baked this recipe before and had it for our Easter brunch we had with our friends earlier this year. What is more perfect than the smell of a baking french toast casserole in your oven on a Sunday morning? This recipe actually is made the day before so all you need to do in the morning is turn on the oven and let it bake and then breakfast is served! You can serve this yummy breakfast delight with a side of fruit, eggs, bacon or sausage and in my household there is ALWAYS coffee! Enjoy your day!
Baked French Toast Casserole
First, gather your ingredients. You need one loaf of french bread of challah, 1 cup of milk, 2 cups of half and half, 8 eggs, 1/4 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 2 tablespoons of sugar, and 1 teaspoon of vanilla. I didn't have vanilla so I put in a dash of almond extract to add something extra ;-)
In a 13X9 baking dish, butter it.
Slice up the french bread, and arrange it in two layer in your baking dish.
In a bowl, combine the eggs, the milk, the half and half, sugar, nutmeg, cinnamon and vanilla extract.
Mix all these ingredients together until the liquid is foamy and bubbly. Then pour the entire contents over the bread, making sure it is evenly covered with the egg mixture.
Then cover the dish, pop it in the refrigerator overnight. The next morning, turn on the oven to 350 degrees. Put the french toast casserole in the oven for about 40 minutes or until it is golden and puffy, then take it over, cut into pieces, pour some maple syrup over it, eat and enjoy!
